If you saw my Instagram stories earlier this week, I shared a recipe for a “lighter” Reuben sandwich, also called a Rachel.
This recipe subs out corned beef for smoked turkey. If you use a single slice of cheese and a half-serving of 1000 island (which is 1 tablespoon), this sandwich clocks in at less than 400 calories.
If you’re watching your fat consumption, you could substitute the full-flavor 1000 island for a low-fat variety. You could also skip the cheese. Keep in mind that some fat isn’t bad, though, and that generally, adults should look to consume about 20% – 35% of total calories from fat. But I’ll get into macros more another time.
Hope you enjoy this sandwich! If you finish this off in the air fryer for about 3 minutes, it crisps up to perfection and tastes like you’re in your favorite cafe. Give it a try!
