Hi everyone, hope your weekend is off to a great start! I took yesterday off work so this is a long weekend for me. I’m planning to relax, unwind, and recharge.
I wanted to share one of my favorite summer dishes with you today: a peach & basil salad. This salad is flavorful, healthy, and very easy to prepare.
Start with a heaping bowl of spring mix. Add a freshly sliced peach, slivered red onions, walnuts, goat cheese, and torn basil leaves. If you’re eating this as a dinner salad, I’d recommend adding a grilled chicken breast or grilled steak to add some extra protein.
There are so many flavors in this salad that it doesn’t need a heavy dressing. Oil & vinegar is a great complement, but if that isn’t your thing, a sweet balsamic would also work nicely.
