Hope you guys are having a great weekend so far. It’s been pretty low-key here, but the weather is beautiful in the Burgh!
I wanted to share with you this yummy macros-balanced dinner idea. It’s been a minuteee since I’ve made meatballs, so I wasn’t sure how they would turn out.
I’m happy to say it was a total hit! Nobody in my family seemed to notice the meatballs were turkey and not ground beef. My toddler even licked one, getting me a step closer to making a dinner she will eat. Haha!
Here’s what’s in ‘em:
- 1 lb ground turkey
- 1/3 cup fresh cilantro, chopped
- 1/2 cup Italian-style breadcrumbs
- 1 tablespoon minced garlic
- 1 tablespoon Italian seasoning
- 1 teaspoon black pepper
- Pinch of salt
Mix all ingredients together and form into balls. Cook on a buttered skillet for about 10 minutes, turning halfway through cooking time.
And what about sides?
For the sides, I served with buttered broccoli and chickpea penne. Subbing out regular penne for chickpea penne kept my macros goals in check by upping the protein and limiting the carbs. Below is the macros breakdown per serving.
