I can’t have lunch meat now that I’m pregnant, so I’ve had to come up with some new go-to lunch wrap recipes.
This is a yummy (and easy!) Mediterranean chicken wrap with fresh Tzatziki (yogurt dill) sauce. Here’s how I make it.
▪️ 1 whole wheat or spinach wrap
▪️ 1 cup pre-cooked chicken, diced
▪️ 1/4 cup cucumbers, diced
▪️ kalamata olives
▪️ feta cheese
▪️ mixed greens or spinach
▪️ 2 tablespoons unsweetened Greek yogurt
▪️ dash of lemon juice
▪️ pinch of garlic
▪️ 1 teaspoon dried dill
▪️ salt and pepper
This is one of those recipes where it helps to have chicken pre-cooked and prepped in the fridge. You can also make a larger batch of tzatziki by using 1 cup yogurt, 1 teaspoon lemon juice, a pinch of garlic, and 1 tablespoon of fresh dill. It will stay fresh in the fridge for up to a week.
