Hi everyone! How was your weekend? I was so happy to spend time outside in the spring weather. I played with Daphne, prepped some new recipes, and finished Season 5 of Game of Thrones (yes, I’m very late to the party on this series). Overall, it was a nice few days.

It’s almost St. Patrick’s Day, and in the spirit of the holiday, I wanted to share an easy recipe for these Leprechaun Larabar Truffles. ☘️🇮🇪🌈
These little dessert bites are sweet and satisfying and use only a few ingredients.
Here’s what you’ll need:
▪️ 3 Larabars (any flavor), cut in half then rolled into balls
▪️ 1/2 cup white chocolate chips
▪️ Green food coloring (I use the Watkins brand without any artificial colors)
▪️ Sprinkles

Start by cutting a few Larabars in half, then roll them into balls. Melt the chocolate chips in a glass bowl for about 45 seconds. Dip the bars into the chocolate and carefully place on a wire baking rack. Top with sprinkles before the chocolate hardens and let chill in the fridge.
I used the Cherry Pie flavor bars, but any would work well here. What flavor will you use?
