Aaaand it’s a new week already. Hope you had a nice weekend. Ours was relaxing and sunny and filled with plenty of yard work.
Today’s recipe is a colorful shrimp stir fry with homemade brown sauce. I don’t usually make homemade sauces so this was a nice treat.
Although this sauce is loosely based on a traditional recipe, I left out the oyster sauce ingredient. Being pregnant, I’m not sure if I’m allowed to have that, so I skipped it. Even without it, the finished product is light and complements the veggies and shrimp nicely.
Here’s what you’ll need:
▪️ 1 clove of garlic, diced
▪️ 1/2 teaspoon fresh ginger
▪️ 1.5lbs of precooked frozen shrimp, thawed
▪️ Assorted stir fry veggies, pre-diced. I used peppers, red cabbage, onions, mushrooms, and peas. Be careful not to overcook! Less hearty veggies (like the peppers) should be added last to avoid them turning mushy.
For the sauce:
▪️ 3 teaspoons peanut or sesame oil, plus a bit more for frying
▪️ 1 1/2 cups chicken broth
▪️ 3 teaspoons sugar
▪️ 4 tablespoons soy sauce
▪️ 1 teaspoon rice vinegar
The first step is to prepare your skillet. Make sure the oil is nice and hot before adding the garlic and ginger first. Olive oil is delicious, but it’s not the right oil to use in a stir fry. Instead, you’ll want a high-heat-tolerant variety like peanut or sesame oil.
Next, cook the pre-diced veggies. Keep in mind that most veggies only take a few minutes to soften, and you don’t want to overcook them. Heartier veggies like snow peas and corn take a little longer, while peppers and greens cook very quickly.
Once the veggies are almost done, add in the ingredients for the sauce. I used chicken broth, a bit of sugar, soy sauce, and rice vinegar.
I added the shrimp last, since mine were pre-cooked and didn’t take much time to heat. If you’re working with fresh meats, you’d want to cook it prior to the vegetables (then move it to a separate bowl once complete).
Serve with brown rice and enjoy!
