If you’ve been reading my blog for a while, you’ll know I’m all about easy, healthy, and delicious meals. Well, nothing gets easier or more delicious than cowboy caviar (sometimes called Texas caviar).
I love this recipe so much, I decided to turn it into a bowl with chicken and rice. Dinner was served in about 30 minutes!
Another thing I love about cowboy caviar is its versatility – you can add almost any vegetables or beans you have on hand and it will turn out great.
For my bowl, I had a bunch of leftover black olives I needed to use that I threw into the dish. Normally I’d make this with corn, but I didn’t have any. Feel free to add or remove ingredients as you’d like.
The only drawback to this being a healthy, well-rounded recipe is the sugar content. I’ve cut the sugar down to 1/4 cup, but if that’s too much, you could try experimenting with a sugar substitute (like stevia) or even honey.
Here’s what’s in my bowl:
▪️ 1 can black beans, drained and rinsed
▪️ Red and yellow mini peppers, chopped
▪️ Half a red onion, chopped
▪️ Black olives
▪️ Fresh cilantro
▪️ 1/2 cup apple cider vinegar
▪️ 1/2 cup olive oil
▪️ 1/4 cup sugar
Combine all ingredients in a large mixing bowl and stir well. To make it a meal, I like to serve mine with cubed chicken on a bed of rice or quinoa.
Cover and refrigerate any leftovers and it will stay fresh in the fridge for a few days. Also makes a great dip for tortilla chips.
